Frozen Fresh Fruit Kabobs

These Frozen Fresh Fruit Kabobs are an ideal summer snack for grab and go energy, for kids, or adults and make great frozen desserts.

They are also impressive and delicious served at summer BBQ’s and pool parties. These fruit kabobs are a great way to keep a clean and light diet without ever feeling deprived, heavy or guilty in any way.

Fruit Kabobs Recipe

GATHER:

Fruit: Blueberries, Bananas, Kiwi, Pitted Cherries, White Grapes, Purple Grapes, Raspberries, Blackberries, Strawberries, fresh Peaches – cubed, fresh Mango – cubed.
Bamboo Skewers
Agave Nectar
Chinese Five Spice Powder

Step ONE: PREP THE FRUITS

Slice bananas and kiwi fruits into thick 1/2 slices, peel and cube mango and peaches into 1 inch cubes, wash berries and place in separate bowls, to make it easier to create beautiful jewel like kabobs.

Step TWO: DETERMINE SWEETNESS

Taste test raspberries, blueberries and kiwi fruits for level of sweetness. If they are found to be tart, toss them to coat with agave nectar. In most cases the grapes, cherries, bananas and mango will be quite sweet without any added help from the agave.

Step THREE: COMPOSE KABOBS

Mindfully push skewers through fruits, making various combinations that please you.

I find it is nice to alternate bright colors with light ones, such as light green grapes followed by bright orange mango or dark blueberries followed by creamy white banana.

Step FOUR: FREEZE

As you complete each kabob, place them on a cookie sheet, and when sheet is full, dust all with a light sprinkling of Chinese Five Spice Powder or Cinnamon. Place all into the freezer for several hours or until you are ready to enjoy.

Step FIVE: ENJOY

My next article will offer recipes for a vegan ice cream social, and these frozen fruit kabobs are beautiful placed in a glass filled with colorful layers of fresh dairy free ice cream.

Happy Happy Happy!

I’m hosting this ice cream social next week in Syracuse New York, and will have pictures and recipes on my blog.
