The 4th of July is synonymous with barbecue grilling. What do you do when hot dogs & hamburgers are no longer an option and you are looking for a vegetarian BBQ with healthy grilling recipes?
For this Fourth of July we have a great vegetarian grilling idea for you – a Vegetarian Shish Kabob for any summer barbecue. We enjoy this and our hohm retreat guests do too when not doing a juice cleanse.
It is so yummy and one of the easiest healthy barbecue recipes that you will be grilling all Summer.
Many of our guests experience weight loss after a juice cleanse & detox and one of the ways to keep the weight off is to eat a healthy diet made delicious with colorful fruits and vegetables.

1 pint cherry tomatoes
1 large white onion

1/2 cup olive oil
1/3 cup balsamic vinager
1/4 cup Nama Shoyu ( soy sauce)
1 teaspoon sea salt

prodigious amount of garden fresh herbs – freshly chopped:
thyme, rosemary, sage, oregano, basil
2 cloves fresh garlic, crushed
STEP ONE:
Cut Vegetables into 2 inch cubes, as uniform as possible
Beginning and ending with a Portobello cube, begin to thread the vegetable cubes onto the skewer, placing a fresh sage leaf, or sprig of thyme or rosemary between each piece.
Press a strong and long sprig of rosemary into each end.
STEP TWO: Marinade
Whisk together the final 8 ingredients.
Place the veggie skewers into a shallow dish large enough to hold in single layer, and pour marinade to coat them completely.
Sprinkle with curry powder, salt and pepper.
Cover with a towel, and allow them to rest in marinade refrigerated, for 15 minutes, then turn to be sure they are nicely coated. Allow them to rest again for another 10 minutes.
TRADITIONAL VERSION:
Grill on your BBQ, turning once, about 5 – 8 minutes per side.
RAW VERSION:
Dehydrate 3-5 hours. The slight dehydration makes this delicious, warm and intensifies the flavors. Really tastes of the most delicious BBQ.
ENJOY 3 ways:
1. Enjoy just as they are,
2. on top of a bed of rice.
3. sandwiched in a warm pita bread with vegan mayo and shredded lettuce
